Asian Raw Carrot Salad

A refreshing and crunchy salad made with shaved carrots, sesame seeds, and a tangy dressing that’s perfect for a sunny lunch or potluck.

  • 4 large Carrots, peeled and shaved
  • 2 tablespoons Sesame Seeds, toasted
  • 2 Green Onions, chopped
  • 1/2 teaspoon Red Pepper Flakes
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Rice Vinegar

Instructions

  1. Prepare your ingredients: Wash and peel the carrots, then shave them into thin ribbons.
  2. Toast the sesame seeds in a small pan over medium heat for 2-3 minutes until golden.
  3. Mix the dressing by whisking together soy sauce and rice vinegar in a small bowl.
  4. Combine all ingredients in a large mixing bowl, adding the shaved carrots, toasted sesame seeds, and chopped green onions.
  5. Add spice by sprinkling red pepper flakes according to your preference.
  6. Taste and adjust the seasoning by adding more soy sauce or vinegar if necessary.

Notes

Allow the salad to sit for 10-15 minutes before serving to let the flavors meld together. Serve chilled or at room temperature.
