Avocado Shrimp Salad

A vibrant and refreshing avocado shrimp salad that brings the essence of summer to your table.

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the shrimp in boiling salted water for 2-3 minutes until pink. Chill in ice bath.
  2. Prepare the vegetables by dicing avocados, halving tomatoes, and chopping cucumbers.
  3. Toss in red onion and cilantro with the vegetables in a mixing bowl.
  4. Mix lime juice, olive oil, salt, and pepper in a small bowl for dressing.
  5. Combine shrimp with the vegetable mixture and drizzle dressing over the top, mixing gently.
  6. Taste and adjust seasoning as needed.
  7. Chill for 10-15 minutes before serving for enhanced flavors.

Notes

Serve on a bed of greens or with tortilla chips. Can be customized with additional ingredients like mango or chicken.
