Best Pesto Grilled Cheese

A warm and gooey grilled cheese sandwich infused with vibrant basil pesto for a delightful twist on a classic favorite.

  • 2 slices sourdough bread
  • 1 tablespoon unsalted butter, softened
  • 2 tablespoons basil pesto
  • 2 ounces fresh mozzarella cheese, sliced
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. Preheat the pan by placing a skillet on medium heat.
  2. Prepare the bread by spreading a layer of softened butter on one side of each slice.
  3. Assemble the sandwich by spreading basil pesto on the unbuttered side of one slice and adding mozzarella, followed by Parmesan.
  4. Cook the sandwich in the hot skillet for about 3-4 minutes until golden brown.
  5. Flip the sandwich and cook for another 3-4 minutes until cheese is melted.
