Blueberry Goat Cheese Flatbread with Mint & Honey

A delightful flatbread recipe that balances sweet blueberries, creamy goat cheese, and fresh mint, all drizzled with honey.

  • Flatbread (store-bought or homemade)
  • 1 cup Fresh Blueberries
  • 4 oz Goat Cheese, crumbled
  • 2 tbsp Honey
  • 1/4 cup Fresh Mint, chopped
  • 1 tbsp Olive Oil
  • Black Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the flatbread on a baking sheet lined with parchment paper.
  3. Add 1 tablespoon of olive oil over the flatbread.
  4. Layer 1 cup of fresh blueberries over the flatbread.
  5. Crumble 4 oz of goat cheese over the blueberries.
  6. Add 1/4 cup of chopped fresh mint on top.
  7. Season with black pepper.
  8. Bake for 15-20 minutes until edges are golden and crispy.
  9. Drizzle with 1 tablespoon of honey after baking.

Notes
