Burrata with Tomato & Basil Drizzle

A delightful dish featuring creamy burrata cheese paired with ripe heirloom tomatoes, fresh basil oil, and a sprinkle of Parmesan. Perfect for summer gatherings.

  • 8 oz Burrata cheese
  • 2 cups heirloom tomatoes, diced
  • 1 cup tomato coulis
  • 1 cup fresh basil leaves
  • ½ cup extra-virgin olive oil
  • ¼ cup grated Parmesan cheese
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Make the tomato coulis: In a saucepan over medium heat, add a drizzle of olive oil. Once shimmering, toss in diced heirloom tomatoes, a pinch of salt, and black pepper. Sauté for about 10-15 minutes until the tomatoes soften and break down into a lovely sauce.
  2. Create the basil oil: While the tomato coulis simmers, blend 1 cup of fresh basil leaves with about ½ cup of olive oil in a high-speed blender.
  3. Prepare the heirloom tomatoes: Slice heirloom tomatoes in various shapes and arrange them on a serving platter, overlapping them.
  4. Plate the burrata: Tear open the burrata cheese and place it in the center of your tomato arrangement. Drizzle olive oil over it.
  5. Add the tomato coulis: Spoon the warm tomato coulis generously over the burrata and around the tomatoes.
  6. Finish with basil oil and Parmesan: Drizzle the basil oil over the entire dish. Sprinkle grated Parmesan cheese and season with salt and pepper to taste.

Notes

For added flavor, consider a splash of balsamic glaze or a sprinkle of red pepper flakes.
