Caprese Chicken Bake

A savory and nostalgic dish that combines tender chicken breasts, gooey mozzarella, sweet cherry tomatoes, and fresh basil, capturing the essence of summer in every bite.

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by pounding it to an even thickness and seasoning with salt and pepper.
  3. Start assembling the dish in a large baking dish by drizzling olive oil and placing the chicken.
  4. Layer on the halved cherry tomatoes and then the fresh basil leaves and mozzarella.
  5. Pop the baking dish into the oven and bake for 25-30 minutes.
  6. Drizzle the balsamic glaze over the dish after baking.
  7. Serve and enjoy with your favorite sides.

Notes

Great served with garlic bread or a fresh salad. Can also be made in advance and baked when ready.
