Chimichurri Chicken Thighs

Juicy chicken thighs marinated in a vibrant chimichurri sauce made with fresh herbs, garlic, and vinegar.

  • 4 Chicken Thighs
  • 1 Cup Fresh Parsley, Finely Chopped
  • 1/4 Cup Fresh Cilantro, Finely Chopped
  • 3 Cloves Garlic, Minced
  • 1/2 Cup Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 1 Teaspoon Red Pepper Flakes
  • Salt and Pepper to Taste

Instructions

  1. Make the Chimichurri Sauce: In a mixing bowl, combine the finely chopped parsley, cilantro, minced garlic, olive oil, red wine vinegar, and red pepper flakes. Stir it all together until well combined. Taste and adjust the seasoning with salt and pepper.
  2. Prepare the Chicken: Pat your chicken thighs dry with paper towels. Generously season the thighs with salt and pepper on both sides.
  3. Marinate the Chicken: Place the chicken thighs in a shallow dish and pour half of the chimichurri over them. Marinate for at least 30 minutes.
  4. Preheat Your Oven or Grill: If using an oven, preheat it to 425°F (220°C).
  5. Cook the Chicken: If roasting, place the marinated chicken thighs skin-side up on a lined baking sheet and bake for 30-35 minutes until fully cooked. For grilling, cook skin-side down for 7-8 minutes, then flip and grill for another 7-8 minutes.
  6. Rest the Chicken: Let the chicken rest for about 5-10 minutes after cooking.
  7. Serve and Enjoy: Serve the chicken thighs drizzled with the remaining chimichurri sauce.

Notes

For extra flavor, let the chimichurri sauce sit for 15 minutes before using it. Adjust spice levels according to preference.
