Citrus Shrimp and Avocado Salad

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh citrus juice (orange, lime, or lemon)
  • 1 ripe avocado, diced
  • 1/4 cup sliced almonds

  • Mixed greens or lettuce

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Once hot, add the shrimp. Cook for about 3-4 minutes, turning them halfway through until they turn pink and opaque.
  2. Remove shrimp from the heat and drizzle on the citrus juice. Toss gently to coat.
  3. Add your mixed greens to a large mixing bowl or layer them on individual plates.
  4. Top the greens with the tossed shrimp, diced avocado, and sliced almonds.
  5. Give everything a gentle toss to combine and ensure all flavors mingle together. Plate it up beautifully.
