Classic Lemon Bars

Zesty and refreshing classic lemon bars, perfect for any occasion with a buttery crust and bright citrus filling.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the Dry Ingredients: In a medium bowl, combine 1 cup of all-purpose flour and 1/4 cup of powdered sugar. Whisk until fully mixed.
  3. Add the Butter: Next, add in 1/2 cup of softened unsalted butter. Mix until it resembles coarse crumbs.
  4. Press into the Pan: Line an 8×8 inch baking dish with parchment paper and press the crust mixture firmly into the pan. Bake for 15-20 minutes until lightly golden.
  5. Combine the Wet Ingredients: In a large bowl, whisk together 1 cup of granulated sugar, 2 large eggs, 1/4 cup of fresh lemon juice, 1 teaspoon of lemon zest, and 1/2 teaspoon of baking powder.
  6. Add Salt: Mix in a pinch of salt to balance the flavors.
  7. Pour the Filling: Once the crust is baked, pour the filling over it and bake for an additional 20-25 minutes until set.
  8. Cool and Dust: Let cool completely before dusting with powdered sugar.

Notes

For variations, try adding blueberries, matcha, ginger, shredded coconut, or strawberry puree for exciting twists.
