Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C).
  2. Mix it up: In a large mixing bowl, whisk together the all-purpose flour, powdered sugar, and salt until combined.
  3. Cream the butter: Add the softened butter to the flour mixture and work it into the dry ingredients until it resembles coarse crumbs.
  4. Form the dough: Gather the mixture and form it into a ball, adding a splash of cold water if necessary.
  5. Press and chill: Press the dough into a 9-inch tart pan, prick the bottom with a fork, and refrigerate for about 20 minutes.
  6. Bake it perfect: Bake the crust for 15-20 minutes or until lightly golden.
  7. Cool it down: Remove from the oven and let cool while preparing the filling.
  8. Blend the filling ingredients: In a mixing bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.
  9. Pour it in: Pour the lemon filling into the cooled tart crust.
  10. Bake the filling: Return the tart to the oven and bake for another 15-20 minutes until set with a slight jiggle in the center.
  11. Chill again: Let it cool at room temperature for 30 minutes, then refrigerate for at least 2 hours to set.
  12. Cook the berries: In a saucepan, combine blueberries, sugar, and lemon juice over medium heat for 5-7 minutes.
  13. Cool it down: Let the blueberry sauce cool before serving over the tart.

Notes

For a gluten-free option, use almond flour or gluten-free blend. Substitute coconut milk for a lighter filling. This tart stores well in the fridge for a couple of days.
