  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, cubed
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Boil Water: Bring a large pot of salted water to a rolling boil.
  2. Add Pasta: Once boiling, add 8 ounces of pasta and cook until al dente, usually 8-10 minutes.
  3. Drain and Rinse: Drain the pasta in a colander and rinse it briefly under cold water.
  4. Halve the Tomatoes: While your pasta cooks, slice 1 cup of cherry tomatoes in half.
  5. Cube the Mozzarella: Cut fresh mozzarella into bite-sized cubes.
  6. Chop the Basil: Chop 1/4 cup of fresh basil leaves.
  7. Mix Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, and mozzarella, gently folding together.
  8. Add Basil and Dress: Add chopped basil, olive oil, and balsamic vinegar, then season with salt and pepper.
  9. Taste Test: Adjust seasoning to your liking.
  10. Chill or Serve: Serve immediately or let it chill in the fridge for about 30 minutes before serving.

Notes
