Easy Greek Lemon Potatoes

  • 2 pounds Yukon Gold potatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh oregano
  • Salt and pepper to taste
  • 1 lemon, zested

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Yukon Gold potatoes by washing and cutting them into wedges or chunks, about 1 to 2 inches thick.
  3. Make the marinade by mixing olive oil, minced garlic, fresh lemon juice, chopped oregano, lemon zest, and a generous pinch of salt and pepper.
  4. Coat the cut potatoes with the marinade until evenly covered.
  5. Arrange the potatoes in a single layer in a large baking dish or sheet pan.
  6. Roast in the oven for about 45-50 minutes, stirring halfway through.
  7. Final seasoning with extra salt and pepper if desired.
  8. Serve the potatoes in a bowl, garnished with fresh oregano or lemon wedges.
