Easy Peach Bars

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 cups peaches, sliced (fresh, frozen, or canned)
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, granulated sugar, and salt in a large mixing bowl.
  3. Add the softened butter and blend it into the dry mixture until it resembles coarse crumbs.
  4. Grease a 9×13-inch baking dish. Pour half of the crumb mixture into the dish and press it down firmly.
  5. Toss your sliced peaches with brown sugar, lemon juice, and cinnamon in another bowl.
  6. Pour the peach mixture over the crust in the pan.
  7. Take the remaining crumb mixture, toss in the rolled oats, and sprinkle over the peach layer.
  8. Bake for 35-40 minutes, or until the top is golden and the filling is bubbly.
  9. Let the bars cool in the pan for at least 30 minutes before cutting.

Notes

These bars can be served warm or at room temperature. Dust with powdered sugar or top with vanilla ice cream for a special treat.
