Easy Spring Orzo Pasta Salad

A vibrant and refreshing pasta salad featuring orzo, fresh vegetables, herbs, and a zesty lemon dressing, perfect for spring gatherings.

  • 1 cup orzo pasta
  • 2 cups fresh vegetables (e.g., bell peppers, cherry tomatoes, cucumbers, red onion)
  • 1/4 cup fresh herbs (such as basil or parsley)
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo by bringing a large pot of salted water to a boil. Add your orzo pasta and cook according to package instructions until al dente, about 7-9 minutes.
  2. Chop the veggies by dicing bell peppers, halving cherry tomatoes, and finely chopping cucumber and red onion.
  3. Assemble the salad by combining the cooled orzo with the veggies and chopped herbs in a large mixing bowl.
  4. Whip up the dressing by whisking together olive oil, lemon juice, salt, and pepper in a separate small bowl.
  5. Dress the salad by pouring the dressing over the orzo salad and gently tossing until well coated.
  6. Chill the salad for at least 20-30 minutes in the fridge before serving.
  7. Plate the dish in bowls and garnish with additional fresh herbs or a squeeze of lemon juice.
