  • 1 avocado, diced

  • 1/2 cup black beans, drained and rinsed
  • 1 cup cooked rice or quinoa
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the rice or quinoa by rinsing it under cold water and cooking according to package instructions.
  2. Cook the chicken in a skillet over medium heat until golden brown and cooked through, then dice it.
  3. Sauté the corn in the same skillet until heated through and slightly caramelized.
  4. Mix in a large bowl the cooked chicken, sautéed corn, diced avocado, halved cherry tomatoes, and drained black beans.
  5. Drizzle lime juice over the mixture and add salt and pepper to taste, adjusting as necessary.
