Easy & Tasty Cherry Crumble Bars

These easy cherry crumble bars feature a delightful mix of sweet-tart cherries, a buttery crumble topping, and evoke warm baking memories.

  • 2 cups fresh or frozen cherries, pitted and halved
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch or 9×9-inch baking dish by greasing it with butter or lining it with parchment paper.
  3. Toss together cherries, sugar, and lemon juice in a mixing bowl, then let sit for 10 minutes.
  4. Combine flour, oats, brown sugar, cinnamon, and salt in another bowl, then mix in melted butter until crumbly.
  5. Press half of the crumble mixture into the baking dish, then add the cherry filling evenly on top.
  6. Sprinkle the remaining crumble over the cherries.
  7. Bake for 30–35 minutes until the topping is golden brown.
  8. Cool in the pan for 30 minutes before cutting into squares.

Notes

For a dairy-free version, substitute unsalted butter with coconut oil.
