French Onion Chicken Orzo Casserole

  • 1 tablespoon olive oil
  • 2 large yellow onions (thinly sliced)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 garlic cloves (minced)
  • 1 1/2 cups orzo pasta
  • 2 cups cooked shredded chicken
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream (or half and half for lighter option)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon Worcestershire sauce or balsamic glaze (for added depth)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in a large skillet with butter and olive oil, sugar, and salt for 20-25 minutes until golden brown.
  3. Add minced garlic and stir for another minute until aromatic.
  4. Mix in orzo pasta, coating it with the onion mixture.
  5. Add cooked shredded chicken, dried thyme, and black pepper, stirring to combine.
  6. Pour in chicken broth and heavy cream, blending well.
  7. Transfer mixture to a greased casserole dish, spreading evenly.
  8. Top with shredded mozzarella and grated Parmesan cheese.
  9. Bake for about 25 to 30 minutes until cheese is bubbly and golden brown.
  10. Cool for 5-10 minutes before serving.

Notes

Serve warm and garnish with fresh thyme or parsley. Pair with a green salad or crusty bread.
