Garlic Herb Chicken with Creamy Mashed Potatoes and Glazed Carrots

A comforting classic combining juicy garlic herb chicken, creamy mashed potatoes, and glazed carrots, perfect for any occasion.

  • 4 skinless, boneless chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes (Russet or Yukon Gold)
  • 1/2 cup milk
  • 4 tablespoons butter
  • 4 carrots, sliced
  • 2 tablespoons honey
  • 1 tablespoon butter (for carrots)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken by drizzling olive oil over it and adding garlic, thyme, rosemary, salt, and pepper.
  3. Sear the chicken in a hot oven-safe skillet for 3-4 minutes on each side.
  4. Bake the chicken in the oven for 20-25 minutes until internal temperature reaches 165°F (75°C).
  5. Boil the chopped potatoes in salted water until tender (15-20 minutes).
  6. Mash the potatoes with butter and milk until smooth, adding salt and pepper to taste.
  7. Melt 1 tablespoon of butter in a pan and sauté carrots for 5-7 minutes until softened.
  8. Add honey to the carrots and cook for another 2-3 minutes until glazed.
  9. Serve the chicken with a side of mashed potatoes and glazed carrots, garnished with fresh parsley.

Notes

For added richness, consider using cream or plant-based milk for the mashed potatoes. Feel free to experiment with different herbs and vegetables.
