Garlic Scalloped Sweet Potatoes

  • 4 large sweet potatoes, peeled and thinly sliced
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 cup grated cheese (cheddar or Gruyère)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 tablespoons butter (for greasing)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep your sweet potatoes by peeling and slicing them to about 1/8 inch thickness.
  3. Mince the garlic cloves.
  4. Create your cream mixture by combining the heavy cream, minced garlic, salt, pepper, and nutmeg in a bowl.
  5. Grease a 9×13-inch baking dish with butter.
  6. Layer the sweet potatoes in the baking dish, slightly overlapping each slice.
  7. Pour the cream mixture over the first layer of sweet potatoes.
  8. Repeat the layering process until all ingredients are used.
  9. Finish by covering with cheese on top.
  10. Cover with aluminum foil and bake for 30 minutes.
  11. Uncover and bake for an additional 15-20 minutes until golden brown.
  12. Garnish with fresh parsley before serving.

Notes

This dish can be prepared in advance and baked later. Store leftovers in an airtight container for 3-4 days.
