The Ultimate Greek Salad with Avocado

A vibrant and fresh Greek salad with a creamy twist of avocado, perfect for summer days and gatherings.

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by gathering and chopping all the veggies.
  2. Toss the chopped romaine lettuce and halved cherry tomatoes in a large bowl.
  3. Add the diced cucumber and stir gently.
  4. Slice the avocado, remove the pit, and fold it into the salad.
  5. Scatter the red onion and Kalamata olives into the bowl.
  6. Crumble feta cheese over the top.
  7. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a separate bowl.
  8. Drizzle dressing over the salad and toss gently to combine.
  9. Serve in a beautiful bowl, garnished with extra feta and oregano if desired.

Notes

To keep avocado from browning, toss it with lemon juice. Best enjoyed fresh, can last 1-2 days in the fridge.
