A delicious Hawaiian BBQ Chicken recipe featuring tender chicken thighs marinated in a sweet and savory blend, perfect for summer cookouts.

  • ⅓ cup Soy Sauce
  • 1 tablespoon Fresh Ginger, grated
  • 3 cloves Garlic, minced
  • ¼ cup Brown Sugar
  • ½ cup Pineapple Juice
  • 2 Green Onions, chopped
  • Sesame Seeds (for garnish)

Instructions

  1. Make the Marinade: In a large mixing bowl, combine the soy sauce, grated ginger, minced garlic, brown sugar, and pineapple juice. Whisk until the sugar is fully dissolved.
  2. Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and let it marinate in the fridge for at least 1 hour, ideally overnight.
  3. Prepare the Grill: Preheat your grill to medium-high heat and lightly oil the grill grates.
  4. Grill the Chicken: Remove the chicken from the marinade and cook on the grill for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (74°C).
  5. Glaze with Marinade: Bring the leftover marinade to a boil in a small saucepan and reduce for about 5-7 minutes. Brush the grilled chicken with the reduced marinade.
  6. Rest Before Serving: Let the chicken rest for 5-10 minutes before serving to retain moisture.

Notes

Serve with coconut rice or coleslaw for a delicious meal. Feel free to add a pineapple salsa or grilled veggies as sides!
