Healthy Mediterranean Couscous Salad

A light and vibrant salad featuring fluffy couscous, fresh vegetables, and a zesty dressing.

  • 1 cup couscous
  • 1 1/4 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 bell pepper, diced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Couscous: In a medium saucepan over medium heat, bring your water or vegetable broth to a gentle simmer. Once warm, add in the couscous, stir it, and cover. Remove from heat and let it sit for about 5 minutes. When it’s ready, fluff it with a fork.
  2. Chop the Veggies: While your couscous is cooking, chop your veggies—dice the cucumber, halve the cherry tomatoes, and finely chop the red onion and bell pepper.
  3. Make Your Dressing: In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper to taste.
  4. Combine Everything: In a large bowl, combine the fluffed couscous, chopped veggies, olives, and crumbled feta. Pour the dressing over and gently toss everything together.
  5. Garnish and Serve: Sprinkle the chopped parsley on top. You can serve it immediately or chill it in the fridge for about 30 minutes to let the flavors deepen.

This salad can be stored in an airtight container in the refrigerator for up to 3 days.
