Healthy Street Corn Salad with Greek Yogurt

A vibrant and delicious street corn salad made healthier with Greek yogurt, perfect for any gathering.

  • 4 ears of corn, husked and grilled
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Feta cheese for topping (optional)

Instructions

  1. Husk your fresh corn and rinse the ears under cold water. Preheat your grill to medium-high heat, then place the corn on the grill and cook for about 10-15 minutes, turning occasionally until charred and tender.
  2. Chop your cherry tomatoes, red onion, and cilantro while the corn cools.
  3. Whisk together the Greek yogurt, lime juice, salt, and pepper in a large mixing bowl to create the dressing.
  4. Cut the kernels off the cooled corn and add them to the mixing bowl with the dressing, along with the chopped tomatoes, onion, and cilantro. Gently fold to combine.
  5. Serve in a bowl, garnished with feta cheese if desired. Enjoy fresh or store for later.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to two days. Avoid adding dressing until serving to keep the salad fresh.
