Herb Chicken with Blueberry Thyme Sauce

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon honey (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the chicken by trimming fat and marinating with salt, pepper, and olive oil for 15-30 minutes.
  2. Heat a skillet over medium heat and add olive oil.
  3. Sear the chicken breasts for 6-7 minutes on one side until golden brown.
  4. Flip and cook for another 6-7 minutes until they reach 165°F (75°C).
  5. Prepare the sauce by combining blueberries, honey, lemon juice, and thyme in a saucepan.
  6. Cook the sauce over medium heat, stirring until blueberries burst, about 5-7 minutes.
  7. Thicken the sauce if desired by adding a cornstarch slurry and simmering for an additional minute.
  8. Serve the chicken on a platter, drizzled with blueberry sauce and garnished with thyme or whole blueberries.
