Honey BBQ Chicken with Garlic Parmesan Potatoes

A delightful dish featuring juicy chicken coated in sweet and tangy honey BBQ sauce, paired with crispy garlic Parmesan potatoes.

  • 4 Boneless, skinless Chicken Breasts
  • 1 Cup Honey BBQ Sauce
  • 2 Pounds Potatoes, Diced
  • 1 Cup Grated Parmesan Cheese
  • 4 Tablespoons Garlic, Minced
  • 4 Tablespoons Olive Oil
  • Salt and Pepper to Taste
  • Fresh Parsley for Garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper, and coat with honey BBQ sauce.
  3. Toss the potatoes with olive oil, garlic, salt, pepper, and half of the Parmesan cheese.
  4. Spread the potatoes on a baking sheet and roast for 20 minutes.
  5. Add the chicken to the baking sheet with the potatoes and drizzle with BBQ sauce.
  6. Bake for another 25–30 minutes until chicken reaches 165°F (75°C) and potatoes are golden brown.
  7. Sprinkle the remaining Parmesan cheese over and return to the oven until melted.
  8. Serve garnished with fresh parsley.

Notes

For a spicy kick, add cayenne pepper to the BBQ sauce. This dish can also be made ahead of time and baked when ready to serve.
