Honey Lime Chicken with Mango Salsa

A delightful dish with tender chicken breasts marinated in a honey-lime glaze, grilled to perfection, and topped with a vibrant mango salsa.

  • 4 Boneless, Skinless Chicken Breasts
  • 1/4 Cup Honey
  • 1/4 Cup Lime Juice
  • 2 Tablespoons Olive Oil
  • Salt and Pepper (to taste)
  • 1 Ripe Mango, diced
  • 1/2 Red Onion, finely chopped
  • 1/2 Red Bell Pepper, diced
  • 1 Jalapeño, seeded and minced
  • 2 Tablespoons Fresh Cilantro, chopped
  • Juice of 1 Lime

Instructions

  1. Marinate the Chicken: In a large bowl or zip-lock bag, combine the honey, lime juice, olive oil, salt, and pepper. Whisk until the honey is completely dissolved. Add the chicken breasts, making sure they’re fully coated in the marinade. Let them marinate for at least 30 minutes.
  2. Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, and lime juice. Mix well and set aside.
  3. Preheat Your Grill: Preheat your grill on medium-high heat.
  4. Grill the Chicken: Once preheated, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the juices run clear.
  5. Let it Rest: Once cooked, remove the chicken from the grill and let it rest for at least 5 minutes.
  6. Serve It Up: Slice the chicken into strips and plate it. Generously top with the vibrant mango salsa.
