Quick and Delicious Kale Quinoa and Chickpea Salad

A refreshing Kale Quinoa and Chickpea Salad packed with nutrients and flavors, perfect for any meal.

Ingredients

  • Kale (4 cups)
  • Tricolor Quinoa (1 cup)
  • Chickpeas (1 can, drained and rinsed)
  • Feta Cheese (½ cup, crumbled)
  • Sunflower Seeds (¼ cup)
  • Crunchy Veggies (1 cup, diced; bell peppers, cucumbers, carrots)
  • Lemon Vinaigrette Dressing (made with 1 lemon, ¼ cup olive oil, salt, and pepper)

Instructions

  1. Rinse the quinoa under cold water.
  2. Cook the quinoa in a saucepan with 2 cups of water, simmer for 15 minutes.
  3. Fluff and cool the quinoa.
  4. Wash and chop the kale, removing stems.
  5. Massage the kale with salt for tenderness.
  6. Combine the cooled quinoa, kale, chickpeas, veggies, and feta in a large bowl.
  7. Add sunflower seeds for crunch.
  8. Whisk together dressing ingredients in a small bowl.
  9. Pour the dressing over the salad and mix well.
  10. Serve and enjoy!
