Marinated Tomato and Burrata Salad with Balsamic Glaze

  • 1 lb grape or cherry tomatoes
  • ¼ cup finely diced red onion
  • 2 tablespoons finely chopped fresh basil
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon fresh ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tablespoon vinegar (your preferred variety)
  • 10 oz burrata cheese
  • Balsamic glaze, for drizzling
  • Fresh basil leaves, for garnish
  • Olive oil, for drizzling

Instructions

  1. Wash the tomatoes: Rinse the grape or cherry tomatoes under cool water and pat them dry.
  2. Cut the tomatoes: Slice each grape tomato in half or leave cherry tomatoes whole.
  3. Mix the marinade: In a medium bowl, combine the halved tomatoes, diced red onion, chopped fresh basil, coarse sea salt, black pepper, extra virgin olive oil, minced garlic, and your choice of vinegar. Toss gently.
  4. Let the mixture sit for about 15-30 minutes at room temperature to marinate.
  5. Create a base: On a serving platter, arrange the marinated tomatoes.
  6. Add the burrata: Tear or place the burrata cheese over the tomatoes.
  7. Drizzle the balsamic glaze over the top.
  8. Finish with olive oil: A light drizzle of extra virgin olive oil goes a long way.
  9. Garnish: Scatter fresh basil leaves on top.
  10. Serve immediately for best flavor.

Notes

Best enjoyed fresh; marinated tomatoes can be prepared a few hours ahead but add burrata just before serving.
