Mediterranean Chicken Gyros

Deliciously marinated chicken wrapped in warm pita bread with fresh veggies and creamy tzatziki sauce.

  • 2 chicken breasts
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Pita bread
  • Tomatoes, sliced
  • Cucumber, sliced
  • Red onion, sliced
  • Lettuce
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • Salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, garlic powder, oregano, salt, and pepper. Coat chicken breasts with the marinade and let sit for at least 30 minutes.
  2. Grill or Cook: Heat a grill pan over medium-high heat. Cook marinated chicken for 6-7 minutes per side, or until cooked through.
  3. Allow the Chicken to Rest: Once cooked, let the chicken rest under foil for 5 minutes.
  4. Prepare the Tzatziki Sauce: In a bowl, mix Greek yogurt, drained cucumber, olive oil, lemon juice, minced garlic, and salt until combined.
  5. Slice the Chicken: After resting, cut the chicken into strips.
  6. Assemble the Gyros: Spread tzatziki on warm pita, add sliced chicken, lettuce, tomatoes, cucumbers, and red onion, then fold.
  7. Serve and Savor: Enjoy gyros with extra tzatziki on the side.
