A vibrant and refreshing side dish featuring crunchy cauliflower, juicy cherry tomatoes, and briny olives, drizzled with a zesty dressing.

  • 1 cup Cherry Tomatoes
  • 1/2 medium Red Onion
  • 1/4 cup Black Olives
  • 1/4 cup Green Olives
  • 1/4 cup Parsley
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 clove Minced Garlic
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Red Pepper Flakes (Optional)

Instructions

  1. Begin by removing the leaves and stem from the cauliflower. Cut it into small florets.
  2. Chop the cherry tomatoes and red onion, ensuring even sizes.
  3. Add sliced black and green olives to the bowl.
  4. Chop the parsley and toss it in with the veggies.
  5. Whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes for the dressing.
  6. Pour the dressing over the mixed ingredients and toss gently.
  7. Let the salad chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad tastes better after sitting in the fridge for a bit. Feel free to adjust the seasoning to taste.
