Ingredients

Scale
  • 2 cups corn (fresh or frozen)
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream (heavy cream or sour cream)
  • 1 tablespoon lime juice

  2. Cook the shrimp in a skillet with butter, seasoning with chili powder, salt, and pepper for 3-4 minutes until pink.
  3. Sauté the corn in the skillet, adding more butter and cooking until slightly caramelized, about 5-7 minutes.

  5. Combine everything by adding the shrimp back to the sauce, folding gently to coat.
  6. Taste and adjust seasoning as needed before serving.
  7. Serve hot, garnished with fresh cilantro and lime wedges on the side.

Notes

Consider varying the recipe with diced jalapeños for heat or using plant-based proteins for a vegan option.
