Mini Salted Honey Lavender Pies

Delightful mini pies filled with creamy honey and lavender, perfect for spring gatherings.

  • 1 ¼ cups All-Purpose Flour
  • ½ cup Unsalted Butter, cold and cubed
  • ¼ cup Powdered Sugar
  • 1 Egg Yolk
  • 12 tablespoons Cold Water
  • ¼ teaspoon Salt
  • ½ cup Honey
  • ¼ cup Granulated Sugar
  • ½ cup Heavy Cream
  • ½ cup Whole Milk
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Dried Culinary Lavender
  • ¼ teaspoon Fine Sea Salt
  • Powdered Sugar for dusting
  • Flaky Sea Salt
  • Fresh Lavender Sprigs (optional)

Instructions

  1. Make the pie crust by mixing flour, powdered sugar, and salt. Add cold butter until crumbly.
  2. Add egg yolk and cold water; stir until dough forms. Chill for 30 minutes.
  3. Preheat oven to 375°F (190°C). Grease mini pie pans.
  4. Roll out dough to ⅛-inch thickness, cut circles, and place in pans.
  5. Blind bake crusts for 10 minutes, remove weights, then bake for another 5 minutes.
  6. In a saucepan, combine honey, sugar, cream, and milk; heat until smooth.
  7. Remove from heat and whisk in eggs, vanilla, lavender, and salt.
  8. Fill the baked crusts with the mixture, about three-quarters full.
  9. Bake for 20-25 minutes until edges are set, sprinkle with flaky sea salt.
  10. Cool for at least 30 minutes, dust with powdered sugar before serving.

Notes

Serve with whipped cream or ice cream for an indulgent treat.
