  • 8 oz Cream Cheese, at room temperature
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Graham Cracker Crumbs
  • 4 tablespoons Butter, melted
  • Light Glaze (optional)

Instructions

  1. Prepare the Strawberries: Grab your fresh strawberries, hulled and chopped, and set them aside.
  2. Make the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well until the crumbs are uniformly moistened.
  3. Form the Base: Scoop out about a tablespoon of the graham cracker mixture and press it firmly into the bottom of your mini muffin tins or silicone molds.
  4. Prepare the Cream Cheese Filling: In a mixing bowl, beat the room-temperature cream cheese until smooth and creamy. Add in the powdered sugar and vanilla extract, and mix until combined.
  5. Fold in the Strawberries: Gently fold in the chopped strawberries into the cream cheese mixture.
  6. Fill the Cups: Divide the cream cheese mixture evenly among the graham cracker crusts.
  7. Chill: Transfer to the refrigerator to chill for at least 120 minutes, or until set.
