Peach Cobbler Cheesecake Bars

A delightful combination of creamy cheesecake and warm peach cobbler, these bars are perfect for any occasion.

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar (for the cheesecake layer)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups peaches, peeled and sliced
  • ½ cup sugar (for peaches)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (165°C) and line an 8×8 inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl until it resembles wet sand.
  3. Press the mixture evenly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes until lightly golden.
  5. Prepare the peach filling by tossing sliced peaches with sugar, cinnamon, cornstarch, and lemon juice.
  6. Beat the softened cream cheese until smooth, then mix in sugar, eggs, and vanilla extract until combined.
  7. Pour the cheesecake batter over the cooled crust and create an even layer.
  8. Top with the peach mixture, pouring the juices over the top.
  9. Bake for 40-45 minutes until edges are set and center is slightly jiggly.
  10. Cool on a wire rack for about an hour, then refrigerate for at least 4 hours before slicing.
