Rose Pistachio Cheesecake Ice Cream

A delightful ice cream that combines the flavors of classic cheesecake with rose and pistachio, perfect for summer celebrations.

Ingredients

  • 1 cup rose water
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 8 oz cream cheese, softened
  • 1/2 cup crushed pistachios
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Mix the cream cheese until smooth and creamy.
  2. Add the sugar gradually until fully incorporated.
  3. Pour in the heavy cream and whole milk, then add rose water, vanilla, and salt.
  4. Fold in the crushed pistachios gently.
  5. Cover the bowl and chill in the refrigerator for 2-4 hours.
  6. Pour the mixture into an ice cream maker and churn for 20-25 minutes.
  7. Transfer to a freezer-safe container and freeze for 4-6 hours before serving.

Notes

For a vegan option, use coconut milk and cashew cream cheese. Stir every 30 minutes if not using an ice cream maker.
