Sautéed Zucchini, Mushrooms, and Onions

A delightful medley of sautéed zucchini, mushrooms, and onions, perfect as a side or light main course.

Ingredients

  • 2 medium zucchinis (sliced into half-moons, about 1 pound)
  • 8 ounces mushrooms (buttons or cremini, sliced)
  • 1 medium onion (thinly sliced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • To taste salt
  • To taste black pepper
  • 1 teaspoon dried thyme (optional)
  • For garnish: Fresh parsley (chopped, optional)

Instructions

  1. Prepare Your Veggies: Begin by slicing your zucchinis into half-moons and your mushrooms into slices. Thinly slice your onion, and don’t forget to mince your garlic.
  2. Heat the Olive Oil: In a large sauté pan, heat your olive oil over medium heat.
  3. Sauté the Onions and Garlic: Add the sliced onion to the pan and let it cook for about 2-3 minutes, stirring occasionally. Toss in the minced garlic for another minute.
  4. Add the Mushrooms: Next, add the mushrooms to the pan and season with a pinch of salt and black pepper.
  5. Toss in the Zucchini: Once the mushrooms are cooked, add your zucchini slices to the pan.
  6. Taste and Adjust Seasoning: After about 5 minutes, taste your sautéed veggies to adjust seasoning.
  7. Finishing Touches: Once everything is tender, remove from heat and optionally sprinkle with fresh parsley.

Notes

Feel free to customize with additional vegetables or spices. Great as a side or stuffed in tacos!
