Deliciously Sweet Strawberry Shortcake Bars

A delightful twist on classic strawberry shortcake, these bars feature a buttery shortcake base topped with juicy strawberries and creamy icing.

  • 1 ¾ cups (250g) all-purpose flour
  • ⅓ cup (65g) granulated sugar
  • 3 tablespoons (45g) packed light brown sugar
  • ¾ cup (170g) salted butter, melted
  • 1 teaspoon (5ml) pure vanilla extract
  • 3 cups (400g) chopped fresh strawberries
  • 2 tablespoons (25g) granulated sugar (for strawberries)
  • 1 tablespoon (9g) all-purpose flour (for strawberries)
  • ½ cup (60g) powdered sugar
  • 1 tablespoon (15ml) light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan.
  2. Combine the all-purpose flour, granulated sugar, brown sugar, and melted salted butter in a large mixing bowl until crumbly.
  3. Press the mixture evenly into the bottom of the prepared pan, creating a crust about ½-inch thick.
  4. Pop the pan into the oven and bake for about 15-20 minutes until the edges are lightly golden.
  5. Wash, hull, and chop your strawberries, then combine them with the additional granulated sugar and flour.
  6. After removing the baked base from the oven, evenly distribute the sweetened strawberries over the warm crust.
  7. Whisk together the powdered sugar, whipping cream, and vanilla extract until it reaches a drizzle-able consistency.
  8. Drizzle the cream topping over the strawberries and return the baking pan to the oven for an additional 20-25 minutes.
  9. Let your creation cool in the pan for about 30 minutes before slicing.

Notes

For an extra touch, serve with whipped cream or a dusting of powdered sugar.
