  • 1 cup sun-dried tomatoes (in oil, drained and chopped)
  • 3 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Boil the Pasta: In a large pot, bring salted water to a rolling boil. Add your pasta and cook according to the package instructions until al dente. Tip: Reserve about half a cup of pasta water before draining to use later.
  2. Sauté the Garlic: While the pasta cooks, heat a drizzle of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add Sun-Dried Tomatoes: Toss in the chopped sun-dried tomatoes, allowing them to mingle with the garlic for another 2-3 minutes.
  4. Pour in the Cream: Reduce the heat to low and pour in the heavy cream, stirring gently. Let the mixture simmer for a couple of minutes.
  5. Stir in the Parmesan: Gradually add the grated Parmesan cheese. Stir until it melts into the sauce and becomes creamy.
  6. Season the Sauce: Taste and add salt and pepper to flavor.
  7. Combine and Cook the Pasta: Add your drained pasta to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes.
  8. Fold in the Basil: Sprinkle in the chopped fresh basil and toss everything together.
