Apple Pie Cupcakes

Delightful cupcakes that combine the classic flavors of apple pie with a fun, shareable twist.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup apple compote
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cupcake tin by lining a muffin pan with cupcake liners.
  3. Mix the dry ingredients in a medium mixing bowl: flour, baking powder, baking soda, salt, and cinnamon.
  4. Cream the butter and sugar together until light and fluffy.
  5. Incorporate the eggs one at a time, then mix in the vanilla extract.
  6. Alternate adding the dry mixture and milk, beginning and ending with dry ingredients.
  7. Fold in the apple compote gently until just combined.
  8. Scoop the batter into the cupcake liners about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool the cupcakes in the pan for 5 minutes before transferring to a wire rack.
  11. Make the cream cheese frosting by beating together cream cheese and powdered sugar until smooth.
  12. Frost the cooled cupcakes generously with the cream cheese frosting.

Notes

For a caramel delight, swirl in some caramel sauce into the batter before baking. Store leftovers in an airtight container for up to 3 days.
