  • 3 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Wash and prepare the arugula by rinsing under cool water and drying it.
  2. Cube the watermelon into bite-sized pieces.
  3. Crumble the feta cheese into large chunks.
  4. Make the dressing by whisking together olive oil and balsamic vinegar.
  5. Assemble the salad by combining arugula, watermelon, and feta, then drizzling with dressing.
  6. Taste and adjust seasoning with salt and pepper as needed.

Notes

You can prepare the ingredients in advance, but mix the dressing just before serving to keep everything fresh. Garnish with fresh herbs if desired.
