  • 8 oz Pasta (Spaghetti or Fettuccine recommended)
  • 2 cups Brussels Sprouts (trimmed and halved)
  • 46 slices Bacon (chopped)
  • 1 cup Cranberries (fresh or dried)
  • 3 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • Parmesan Cheese (for garnish)

Instructions

  1. Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package directions until al dente. Reserve about a cup of pasta water, then drain.
  2. Sauté the Bacon: In a large skillet over medium heat, add the chopped bacon. Sauté until crispy and golden brown, about 5–7 minutes. Transfer the bacon to a plate lined with paper towels, keeping the bacon grease in the skillet.
  3. Cook the Brussels Sprouts: In the same skillet, add the halved Brussels sprouts. Sauté for about 4–5 minutes until they start to brown and become tender.
  4. Add Garlic and Cranberries: Add the minced garlic and sauté for 1 minute until fragrant. Toss in cranberries and cook until soft, about 3–4 minutes for fresh cranberries.
  5. Combine Pasta and Sauce: Add the drained pasta directly into the skillet. Toss everything, adding a splash of reserved pasta water to create a sauce. Stir in the crispy bacon.
  6. Finish and Serve: Drizzle olive oil over the pasta, season with salt and pepper, and mix. Cook everything together for another minute to heat through.
