Balsamic Pot Roast

A warm and comforting Balsamic Pot Roast that brings together rich flavors of beef, balsamic vinegar, and fresh vegetables for a nostalgic family dinner.

Ingredients

  • Chuck Roast (3-4 pounds)
  • Carrots (4-5 medium-sized)
  • Balsamic Vinegar (1 cup)
  • Onions (2 medium)
  • Garlic (4 cloves)
  • Beef Broth (2 cups)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare your ingredients by washing veggies and patting the roast dry.
  2. Sear the roast in a skillet with olive oil over medium-high heat for 4-5 minutes on each side.
  3. Prep your veggies by chopping onions, carrots, and mincing garlic.
  4. Combine the roast with the vegetables, balsamic vinegar, and beef broth in a slow cooker or Dutch oven.
  5. Season the broth with additional salt, pepper, and herbs to taste.
  6. Let it cook for 8 hours on low in the slow cooker or 3-4 hours at 300°F (150°C) in the oven.
  7. Rest the roast for 15 minutes before serving.

Notes

Serve with creamy mashed potatoes or crusty bread to soak up the sauce. This dish can be made ahead of time and reheats beautifully.
