Beef & Butternut Squash Chili

Warm up with this hearty and comforting Beef & Butternut Squash Chili, perfect for chilly nights in.

Ingredients

  • 1 lb ground beef
  • 1 medium butternut squash, peeled and diced
  • 1 can (15 oz) beans of your choice (black, kidney, or pinto)
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt & pepper to taste

Instructions

  1. Cook the beef in a large pot or Dutch oven over medium heat until browned, about 5-7 minutes.
  2. Sauté the onions for 3-4 minutes until translucent, then add garlic for the final minute.
  3. Mix the chili powder, cumin, salt, and pepper into the pot.
  4. Add the diced butternut squash, stirring to combine.
  5. Incorporate the diced tomatoes and drained beans, stirring well.
  6. Pour in the beef broth and bring to a gentle boil; then reduce heat and simmer for at least 30 minutes.
  7. Taste and adjust seasoning as needed, adding more broth if desired.
  8. Serve the chili in bowls and enjoy!

Notes

Chili tastes even better the next day! Leftovers can be stored in the fridge for up to 4 days.
