Cozy Beef Stroganoff

A classic, creamy Beef Stroganoff recipe featuring tender strips of beef, mushrooms, and a luscious sour cream sauce over egg noodles.

  • 11.5 pounds beef sirloin or tenderloin, sliced into thin strips
  • 8 ounces fresh mushrooms, sliced
  • 1 cup sour cream
  • 12 ounces wide egg noodles
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by slicing beef, chopping onions and garlic, and cleaning and slicing mushrooms.
  2. Sear the beef in a large skillet over medium-high heat for 2-3 minutes, then remove from skillet.
  3. Sauté the onions in the same skillet for 3 minutes, then add garlic for another minute.
  4. Cook the mushrooms for 5-7 minutes until browned.
  5. Make the sauce by sprinkling flour over the mixture, then slowly add beef broth and bring to a simmer.
  6. Add the seared beef back to the skillet and simmer for 5 minutes.
  7. Finish with sour cream, adjusting seasoning as needed.
  8. Cook the egg noodles according to package instructions.
  9. Combine the noodles with the beef mixture and serve.

Notes

Garnish with fresh parsley or chives. Pairs well with green peas or a salad.
