The Best Vegan Biscoff Crumbl Cookies

Delicious vegan cookies combining the rich flavors of Biscoff cookie butter with a soft, chewy texture and a crunchy topping.

  • 1 cup Biscoff cookie butter
  • 1/2 cup vegan cream cheese
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup almond milk (or any non-dairy milk)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup crushed Biscoff cookies for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Combine the Biscoff cookie butter and vegan cream cheese in a mixing bowl until smooth.
  4. Gradually mix in the brown sugar and granulated sugar until well combined.
  5. Add the almond milk and vanilla extract, and mix until incorporated.
  6. Whisk together the flour, baking soda, and salt in a separate bowl.
  7. Gradually add the dry mixture to the wet ingredients, stirring until no flour pockets remain.
  8. Fold in the crushed Biscoff cookies gently.
  9. Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
  10. Sprinkle extra crushed Biscoff cookies on top of each dough mound.
  11. Bake for 10-12 minutes until edges are golden and centers are soft.
  12. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
