Delightful Biscoff muffins infused with rich, spiced flavor, perfect for breakfast, snacks, or dessert.

  • 1/3 Cup Brown Sugar
  • 1/3 Cup Canola Oil
  • 1/2 Cup Buttermilk
  • 1/2 Cup Biscoff Spread (melted)

  • 1 1/2 Cups All-purpose Flour
  • 1/2 Teaspoon Ground Cinnamon
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • 4 Biscoff Cookies (crushed, optional)
  • 2 Tablespoons Biscoff Spread (for the drizzle, optional)
  • 1/2 Cup All-Purpose Flour (for topping)
  • 1/3 Cup Light Brown Sugar (for topping)
  • 1/2 Teaspoon Ground Cinnamon (for topping)
  • 4 Tablespoons Biscoff Spread (melted and cooled, for topping)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Muffin Tin: Grease a muffin tin or line it with paper liners.
  3. Mix the Wet Ingredients: In a large mixing bowl, whisk together the eggs, brown sugar, and canola oil until well combined. Stir in the buttermilk, melted Biscoff spread, and vanilla extract.
  4. Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, and salt.
  5. Gradually Combine Wet and Dry Mixes: Add the dry ingredients to the wet ingredients and mix gently until just combined.
  6. Fold in Cookie Crumbs: Gently fold in the crushed Biscoff cookies if using.
  7. Fill the Muffin Tin: Scoop the batter into each muffin cup, filling them about 3/4 full.
  8. Make the Topping: In a small bowl, mix together the flour, brown sugar, and cinnamon for the topping, then drizzle in the melted Biscoff spread.
  9. Bake: Slide the muffin tin into the preheated oven and let them bake for about 18-20 minutes.
  10. Cool and Drizzle: Let the muffins cool in the pan for about 5 minutes before transferring to a wire rack and drizzling with extra Biscoff spread if desired.

Notes

These muffins can be frozen for up to 3 months and reheated when needed.
