Hearty Cajun Potato Soup

A comforting, aromatic Cajun Potato Soup filled with creamy potatoes, spices, and andouille sausage, perfect for chilly evenings.

  • 1 lb Andouille sausage, chopped
  • 3 medium Potatoes, peeled and diced
  • 1 medium Onion, chopped
  • 1 Bell pepper, chopped
  • 2 stalks Celery, chopped
  • 2 tsp Cajun spices
  • 1 cup Heavy cream
  • 4 cups Chicken broth
  • Salt & Pepper, to taste
  • 1 cup Cheddar cheese, shredded

Instructions

  1. Prep your ingredients by chopping your andouille sausage, potatoes, onions, bell peppers, and celery into bite-sized pieces.
  2. Cook the sausage in a large pot over medium heat with a drizzle of olive oil until browned, about 5-7 minutes.
  3. Sauté the chopped onions, bell peppers, and celery in the sausage drippings until tender, about 5 minutes.
  4. Add the chopped potatoes and Cajun spices; cook for another 2-3 minutes.
  5. Pour in the chicken broth and bring to a gentle boil, then reduce heat to low and cover, simmering for 20 minutes.
  6. Add heavy cream and cheddar cheese, stirring until well combined and heated through.
  7. Serve the soup hot, garnished with parsley or green onions if desired.

Notes

Adjust seasoning with salt and pepper to taste. Can serve with cornbread or over rice.
