Carrot Cake Smoothie

A refreshing drinkable version of classic carrot cake with creamy textures and delicious flavors, perfect for breakfast or a snack.

  • 1 Raw Carrot, Peeled and Chopped
  • 1 Banana
  • 1/2 Cup Pineapple Chunks
  • 1 Cup Coconut Milk
  • 1/2 Cup Greek Yogurt
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1 Tablespoon Honey (Optional)
  • Ice Cubes (Optional)

Instructions

  1. Start by prepping your ingredients — peel and chop the carrot, peel the banana, and measure out your pineapple chunks.
  2. Layer in your chopped carrot first, followed by the banana, pineapple, and coconut milk in your blender.
  3. Scoop in your Greek yogurt, add the cinnamon and nutmeg.
  4. Drizzle in honey if using.
  5. Secure the lid and blend on high until creamy and smooth.
  6. Taste for sweetness and adjust if necessary.
  7. If desired, toss in a few ice cubes and blend again until smooth.
  8. Pour into glasses and garnish with cinnamon or crushed nuts if desired.

Notes

Add spinach for greens, nut butter for crunch, or cocoa powder for a choco-carrot twist.
