Cherry Chia Pudding

A sweet and easy Cherry Chia Pudding that combines nostalgia with nutrition, perfect for breakfast, snacks, or dessert.

Ingredients

  • 1 cup fresh or frozen cherries, pips removed
  • 1 cup (250ml) almond milk or other plant-based milk
  • 2 tbsp maple syrup (or honey for non-vegan)
  • 1 tsp vanilla extract
  • 5 tbsp chia seeds
  • Pink pitaya powder (optional for color)
  • Toppings: plant-based vanilla yogurt and extra fresh cherries (optional)

Instructions

  1. Prepare the cherries by pitting and halving fresh cherries or thawing and chopping frozen cherries.
  2. Blend the cherries, almond milk, maple syrup, and vanilla extract until smooth.
  3. Add the chia seeds to the mixture and stir well to combine.
  4. Chill the mixture in the fridge for at least 4 hours or overnight.
  5. Serve the pudding in cups or bowls, topped with yogurt, pitaya powder, and fresh cherries.

Notes

This pudding tastes even better the next day! Adjust sweetness to taste with different sweeteners if desired.
