Chicken Enchilada Casserole

  • 1 lb cooked, shredded chicken (or rotisserie chicken)
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a 9×13-inch baking dish by lightly greasing it with cooking spray.
  3. Shred the chicken using two forks.
  4. Layer the ingredients starting with enchilada sauce, then tortillas, chicken, cheese, and repeat until all ingredients are used.
  5. Bake covered with aluminum foil for about 25 minutes, then uncover and bake for an additional 10-15 minutes until golden.
  6. Let the casserole rest for 10 minutes before serving.
